Bananas were one of the Port of Baltimore's top ten imports, according to Francis Beirne's 1951 classic "The Amiable Baltimoreans," and they were used in a variety of cuisines.


☐1 chicken, quartered
☐ 1 cup flour
☐ 1 egg
☐ 2 tablespoons water
☐ 1 cup breadcrumbs
☐  ½ tablespoon celery seed
☐ salt and pepper to taste
☐ ¼ cup clarified butter or oil

Step 1

In a mixing dish, place the flour. Separately, whisk together the egg and water. In a separate bowl, toss together the bread crumbs, celery seed, salt, and pepper.

Step 2

Fry chicken in heated oil until internal temperature reaches 165 degrees (check with a food thermometer) or fluids flow clear when fork punctured.

Sauce Ingradiants

☐ 1 tablespoon butter
☐ 1 tablespoon flour
☐ 1 cup cream
☐ 1 teaspoon red wine vinegar
☐ 1 teaspoon mustard powder

☐ 1-2 tablespoons horseradish
☐ salt and pepper to taste
☐ 1 banana peeled and sliced in half, then halved lengthwise
☐ 4 slices of bacon

Step 1

In a sauce saucepan, melt the butter with the flour. Add the cream and bring to a boil until it has cooked through. 10 minutes on low heat

Toss in the horseradish, vinegar, and mustard powder. Continue to cook for another few minutes. Taste and adjust seasonings as necessary.
